MasterClass 400/1000 Grit Combination Whetstone
This combination whetstone is perfect for when knives are very blunt or are chipped or damaged. Using the 400 Grit side will repair very blunt, damaged and chipped blades, whilst the 1000 Grit side will sharpen the blade.

Remove the whetstone from the non-slip base and soak the whetstone in water for around 10-15 minutes until all of the bubbles have been released from the stone.
Replace the non-slip base on to the whetstone and then set the angle of the blade to the whetstone as appropriate. In the case of Japanese knives this will be 15 degrees. In the case of western knives 20-25 degrees. If possible use a guide rail for a more accurate angle.
Applying moderate pressure grip firmly and move the blade in a forwards and backwards motion against the whetstone until the blade is sharp.
Turn the blade over and repeat step three with the same amount of strokes to ensure an even cutting edge.
After sharpening, wash your knives in mild soapy water and dry before use.
