To sharpen blunt knives, pull the knife through the sharpener from heel to tip 3-5 times, with the blade tip pointing down. To hone a freshly-sharpened edge and for regular maintenance of your knives, gently pull the knife through from heel to top 3-5 times, but with the blade tip tilted upwards.
